Roasting whole spices before grinding them to make powders to use or making masala mixes like garam masala is a great way to bring out their essential oils, aroma and flavour. But, you can choose to not roast some of them and directly grind. Like you can use our Malabar black pepper or Alleppey green cardamom directly without roasting in most recipes.
No! You can use whole or grind the spices depending on the recipe you are making. But, if you are grinding the spices before using them, we would highly recommend doing that you grind them fresh. They will smell divine and lend next level flavour to food.
